Green mandarins from Jeju

This concentrate uses unripe mandarins from the South Korean island of Jeju. It is a fruit concentrate prepared in the style of Korean cheong drinks, mixed with water rather than steeped tea leaves.

What does it taste like?

Green mandarin has a lively tart first impression, gentle sweetness, clear mandarin aroma and a lightly bitter finish. Compared with yuzu, its citrus character is more direct; yuzu has a broader aromatic profile.

Hot tea or iced lemonade

Stir 35 g of concentrate into 250 ml of hot, cold or sparkling water. Adjust the dilution to taste. For a cold drink, add ice, herbs or citrus slices.

Ideas for the kitchen

Try it in salad dressings, fish or poultry marinades, yogurt, desserts and nonalcoholic cocktails. Its citrus flavor adds freshness and a lightly bitter accent. It can also be used as a spread or in gingerbread, macarons, cakes and sauces.

Using the concentrate

This is a fruit concentrate rather than leaf tea. Check the label for the exact ingredients and storage instructions, and adjust the amount to suit your drink or dish.
